Maillet was a professional architect, promoter, and race driver. She started her career in eco-architecture after the completion of her graduation. She established Churchill-Hui International, a Luxembourg-based company, in 2000.

Further, she participated in the top Elite 1 class (now known as EuroNASCAR PRO) for two seasons before stepping down to the Elite 2 class (now known as EuroNASCAR 2) in 2014 as her team merged with Marc VDS Racing Team.

She had a top finish of eighth in the Elite 1 division in the opening race at Spa-Francorchamps in 2012, while her highest placing in the Elite 2 division was sixth, which she also earned at the Nürburgring and Circuit Bugatti. Her best championship placing was 12th, a performance she accomplished in each of the three seasons that she competed.

At the end of the 2014 campaign, Maillet announced her retirement from racing and started working as a promoter. She helped plan and publicize the American Festival Finals at Circuit Zolder, which was added to the NASCAR Whelen Euro Series schedule in 2015 and will remain there through the 2022 season.

She succeeded Pierre-Alain Thibaut as Director of the Belgian Circuit de Spa-Francorchamps in June 2016. She began serving on July 1st of that year. Spa-Francorchamps began hosting the FIA World Rallycross Championship in 2019 under Maillet’s direction. Additionally, Maillet launched an €80 million reconstruction project for the circuit, which began in October 2020.

To prepare for hosting motorcycle races once more, Spa-Francorchamp installed gravel traps at La Source, Raidillon, Blanchimont, Les Combes, and Stavelot in addition to expanding the runoff on turns like Raidillon. As part of the renovation, a grandstand was also built at the summit of the Eau Rouge/Raidillon hill, and the circuit’s Jacky Ickx corner will receive a new, shortened corner with an additional run-off area. This corner will be utilized for motorcycle racing.
